Ultimate fast food - salmon and veggies - prepped , cooked and eaten in 30 mins---not so mindful eating tonight ?
Preheat oven to 220 c. Line roasting tray with parchment paper
Cut new potatoes into small disks - about 8 of them
Place potato slices on parchment paper with a drizzle of olive oil and some dried oregano and sea salt.
Cook for 10 mins then add some sliced tomatos and salmon and tear a couple of slices of Parma ham and drop around the dish. Some black pepper and cook for 15 minutes. Add some basil leaves and serve.
