First I lightly cook the bacon in a pan for about 3 minutes, then pat dry with paper towels. Using a muffin tin, I spray each cup with cooking spray. In this case, I used an olive oil cooking spray. Preheat oven to 425 degrees farenheit. Next line each cup in the tin with a slice of the slightly cooked bacon. Carefully crack an egg in each cup. Season with sea salt, black pepper, and a pinch of parmesan cheese. Place the muffin tin in the oven and bake for about 12-15 minutes. Take them out of the oven and garnish each cup with chopped chives.
