Roast the mini or C sized Yukon potatoes at 400 for 40 minutes or so until done. Cook chicken breasts, tenders, or thighs in butter with onion and sliced Crimini mushrooms. Add about a quarter cup cream, a tablespoon of dijon, and a thin stream of truffle oil (optional). I added a tiny dash of powdered habanero but a tiny amount of anything hot would work. Add baby greens of your choice at the very end, and salt and pepper to taste.
