Chunky Japanese Guacamole on Toast

Peel and scoop the flesh of one large, ripe avocado into a bowl. Add a splash of lemon juice and roughly chop the avocado into small chunks. Add a large handful of shelled edamame beans, half a red chilli (sliced), a generous splash of soy sauce and mix well. Season with salt and pepper to taste, adding a splash of chilli oil if needed.

Serve heaped on a large slice of lightly toasted bread - sourdough bloomer shown above! Enjoy! #vegetarian
