Classic challah (makes 4 loaves)
4 cups warm water
2 packets active dry yeast (about 5 teaspoons)
4 teaspoons sugar
9 cups flour
2 teaspoons sea salt

Combine water, yeast, sugar- let sit until foamy
Whisk together flour and salt
Add flour mixture to yeast mixture a little at a time stirring as you go
Knead for about 10 minutes
Let rise about an hour
Knead/punch down
Let rise another half an hour
Divide dough and braid as you like (pictures is a 6 braid)
Let rise another half an hour
Bake on 500 for 20 minutes then lower to 400 for another 10-15 min
