Smoky chickpea & mushroom lettuce tacos!
Sauté an onion & some mushrooms in a pan. Add some tomatoes, garlic, chili powder, smoked paprika, salt & pepper and cook for a minute or two. Add your chickpeas (if you've had time to soak and cook your own, good for you. If not, use canned) and a generous squeeze of lime juice and heat through.
Serve on lettuce or chard wraps with avocado, cilantro, dollops of sour cream or yogurt and a squirt of sriracha.
