That spaghetti bolognese ? start carrots and celery in hot pan with butter and oil, add onions, add meat, brown it. Throw in some nutmeg, lower heat and add milk. Finish off with tomato paste and a can of San Marzano tomatoes. Mix in pasta, garnish with Parmesan cheese and fresh basil. If the sauce feels tight, add some pasta water to loosen up.
