Quick and delicious weeknight meal using whatever you have in your fridge??
1 cauliflower head, chopped into florets
4 carrots, chopped
1 cup chickpeas
1 large sweet potato, cubed
1/2 red onion, diced
3 handfuls of Tuscan Kale, chopped
2 lemon wedges
2 bay leaves
1/2 cup chicken stock
1/2 cup water (more as necessary)
Salt and pepper (to taste)
Heat lidded sauté pan over med heat.
Simmer sweet potatoes, chickpeas and bay leaves in stock and water. Once they start to tenderize, about 10-12 min, add in onions, carrots and cauliflower. Squeeze lemons over vegetables, add more water if necessary, cover with lid and return mixture to a simmer. After roughly another 10-12 min, add parsley, thyme, salt and pepper. Mix and simmer with the lid off. The juices will cook out and reduce down to a sauce. Once at the desired consistency, stir in kale to wilt and serve.
