Easy yogurt flatbread: I love yeasted bread, but when that's not in the cards, mix equal parts flour and Greek yogurt (I did 1 cup each), 1 teaspoon baking powder and 1/2 tsp salt. I added chopped cilantro and scallion but you could take it in any direction. Divide into 4 parts, roll them into pancakes and grill/bake/Saute in a hot skillet--preferably in ghee. I suspect letting the dough rest a bit would do it some good, but for me the whole point is being able to throw these together quickly. The yogurt adds a kind of complexity you might be missing from a long rise and yeast.
