My favorite summer dinner! Greek salad with elk steak: I mixed romaine, cukes and quick pickled shallots, and seared steaks, sprinkled with salt and pepper, on hot skillet with olive oil for 3ish minutes a side. Then quickly tossed chopped red cabbage in hot skillet and mixed with juices to soften slightly. For the dressing: olive oil, red wine vinegar, a squirt of mustard, garlic clove or two and a healthy bunch of fresh oregano and parsley and emulsified! Paired with a tart berlinerweise!
