Soft and Chewy Dark Chocolate Cookies with Caramel and Sea Salt
• cream a stick of butter with a 1/2 cup each of granulated and brown sugar • mix in 1 egg and 1 teaspoon vanilla bean paste • sift together 1 cup of flour, 3/4 cup cocoa powder, 1 teaspoon baking soda and 1/4 teaspoon course salt • stir flour mixture into butter mixture • stir in 2 tablespoons heavy cream or milk • chill dough for 2 hours in fridge before shaping into 2 tablespoons sized balls and baking at 350 for 13 minutes
While the cookie dough is chilling make caramel. I suck at this and made an easy brown sugar one • 1 cup brown sugar heated over medium heat until melted (stirring constantly) • add 6 tablespoons butter and stir until incorporated • pour in 1/4 cup heavy cream and let boil for a minute • remove from heat and let cool
When cookies are done just make a slight indent in the center of each one, fill with a dollop of caramel and sprinkle with sea salt ?
