Roll out puff pastry to a 10x16 inch (or however big you can make it) rectangle. Cut a 1/2 inch border with a sharp knife, pierce the inside with a fork, bake at 400 for 15mins. Remove from oven, squish down the center square with a spatula and top with veggies and cheese, whatever kind you want (here: goat cheese caramelized shallots, roasted tomatoes and zucchini, asparagus, Gruyere and a dusting of Parmesan). Bake for about 20 more mins until done. Top with fresh herbs if you want (here chives and chive blossoms). Yum!!
