Roasted Peaches and Plums:
Cut 4 ripe plums and 4 ripe peaches in 1/8's and place in a Pyrex dish.
Sprinkle 1/4 cup light brown sugar and the leaves of 7-8 thyme sprigs over fruit. Add 1/4 cup Navan liqueur and 1/4 cup water over fruit. Add 2 T. Vanilla extract.
Cover with aluminum foil and roast at 400F for 12 minutes. Keep aluminum foil on Pyrex until dish has cooled.
Add your favorite granola (I used Elizabeth's Granola) and add one scoop of ice cream. Serve fruit warm.
