Roasted eggplants & tomatoes ??
Ingredients: 1 eggplant medium size, 300gr. Cherry tomatoes, 1 clove of garlic, fresh herbs (parsley or basil), olive oil, salt and pepper
Chop the tomatoes and the garlic and combine them in a bowl to marinate with salt, pepper (to taste) and olive oil (a couple of spoons). Add fresh herbs.
Then slice the eggplant.
Finally arrange layers of eggplant and tomatoes, and cook in the oven at 200 degree Celsius for 40-45 minutes.
Simple healthy tasty... I am using leftovers for pasta tomorrow!
