Turkey pine-nut currant meatballs.......
These are scrumptious! Recipe is from Health.com, and I can't say enough good things about them.
Mix all the ingredients together & brown them in oil. Add the sauce and kale to the pan and simmer for 5 minutes before adding the meatballs and then simmer meatballs for another 15 minutes.
Finish with a generous sprinkling of Parmesan cheese.
I make these so often that I keep a tube of basil on hand in the fridge when basil isn't so readily available.
