Chickpea salad with tomatoes, cucumber, feta, and fresh dill and lemon dressing!
Drain and rinse 2 cans on chickpeas. Add a chopped cucumber and a chopped tomato or two. Sprinkle in some feta cheese and toss with a dressing made with the juice of one lemon, about a 1/4 cup of olive oil, a bit of whole grain mustard, salt, pepper and plenty of fresh dill. Refrigerate for a half hour or so to let the flavors come together and enjoy!
