20 Minute Tofu Scramble Zucchini Boats!
Cut zucchini in half and hollow out the center. Rub a little bit of oil, salt and pepper and bake at 400 for 20min (or more depending on your texture preference). Meanwhile, sautée veggies and tofu in a pan with turmeric, cumin, chili powder, cayenne, s&p, red pepper flakes (or any spice combo you like). Load up the boats and top with condiments of your choosing (I did salsa, hot sauce and a ton of nutritional yeast).
