Chicken tortilla soup. Leftover chicken from last nights tacos. I saved the juice from the crock pot and added chicken broth, black beans, pinto beans, corn, mini heirloom tomatoes, yellow onion, and rice to the pot until the rice was cooked. Served with avocado, green onions, olives, shredded Mexican cheese and fresh tortillas.
