Cauliflower dip with chive oil - sauté a small onion in olive oil until soft, add a whole head of cauliflower separated into florets. Simmer in 2 cups of milk until the liquid has reduced and the cauliflower is very soft. Season and purée. Bash together chopped chives with olive oil and a pinch of salt. Top the purée with the chive oil, toasted almonds and a squeeze of lemon.
