Vietnamese Pok Pok-Style Fried Fish Sauce Wings

Chicken wings are marinated overnight in a mixture of salt, sugar, fish sauce and garlic.
For dipping sauce, mix minced garlic, fish sauce, water, sugar, vinegar and red chili flakes. Let the mixture simmer on medium-low for about 20-30 minutes. Adjust taste. The sauce will thicken a little, but if you prefer thicker sauce, add corn starch.
Fry after coating the wings in a mixture of 1/2 rice flour and 1/2 tapioca starch (for crispness). Coat fried wings with the sauce. Serve with quick pickled shredded daikon and carrots. The wings are marinated well, so they are delicious without the sauce. Frying and cooking fish sauce gets stinky. If you have a portable burner, cook outside. If you don't, it is so delicious that it's worth the stink.
