Kitchen hack chilaquiles. Buy an extra pork chile verde burrito from your fav Mexican joint. (Scrape the burrito stuffing into a bowl and eat the tortilla.) save any leftover beans and rice, too. When you're ready to make dinner, tear a few stale corn tortillas in canola oil. (Save the oil). Put the pork chile verde in a pan along with the leftover beans and rice and add a cup of chicken sauce. Heat until warm and slightly thickened. Fry a few eggs in the leftover tortilla-frying oil. To assemble. Put crisp tortilla on a plate. Spoon filling over. Top with fried egg. Garnish with tomatoes, cilantro and a splash of your favorite hot sauce.
