Pan seared tilapia with steamed asparagus and roasted tomato
Pre-heated over to 400F. Cut a tomato in half, drizzle with olive oil, dried thyme, salt & pepper and roast in the oven for around 20 minutes. Remove from the oven, sprinkle Parmesan and pop back in the oven for a couple of minutes. The asparagus are simply steamed and then seasoned with salt and pepper. I made gremolata with chopped fresh mint, lemon zest, garlic and red pepper flakes which I sprinkled on a simply pan-seated tilapia fillet.
