Prosciutto and arugula pizza - classic Napolitana dough made with 00 flour. San Marzano tomatoes run through a food mill, fiore di latte mozzarella, prosciutto, and arugula tossed with olive oil, sea salt, and a few drops of lemon juice. Baked at 550 F on a baking steel and then run under the broiler for two minutes - the arugula is added after it comes out of the oven.
