Beets from the garden!

Separate beets from greens, rub olive oil over beets and grill over medium heat, turning until charred on all sides.
Meanwhile, sautée greens in a pan with olive oil, salt and pepper, and garlic.
When beets are charred let cool a few minutes, then peel off skin. Slice and serve with greens and a little goat cheese if desired.

Do you have to peel the beets? Or can I eat then while after roasting? ❤️

No need to peel before! Just let the skin get charred and it comes off pretty easy after. I just like to rub it a bit. Make sure you don't burn your hands!
