Green vegetable green curry - sauté a couple tablespoons of green curry paste in a tablespoon of coconut oil for a minute or two. Stir in a can of coconut milk plus a can of water. Add chopped broccolini, broccoli, and cubed tofu. Simmer until vegetables are just cooked. Taste and add a bit more curry paste if desired or a few shakes of fish sauce. Stir in some baby spinach until just wilted. Serve topped with fresh enoki mushrooms and a generous squeeze of lime.
