When was the last time you had leeks en vinaigrette? Boil some large, halved leeks, and meanwhile prep your vinaigrette: whisk a diced shallot, garlic clove, a couple tablespoons of Dijon mustard, olive oil, vinegar, and a dash of sugar. When your leeks are fork tender, dry 'em and douse 'em. They get better the longer they sit!
