Perfect strawberry cheesecake every single time!
2 2/3 cups graham crackers
1/2 cup softened butter
4 packs of philly cream cheese blocks
1/2 cup of heavy whipping cream
1 cup of sugar
1 tbs vanilla extract
4 room temperature eggs
Thin mesh Sieve - must have!
Mix crumbs and butter - press firmly into springfoam pan
Mix room temp cream cheese with sugar and vanilla, add eggs one at a time, then cream
Pour through mesh sieve to filter out any missed lumps - easy lump free cheesecake tip!
Pour over crumb base and place cheesecake in water bath
Bake for 1 hour + 30 mins at 320 degrees
Make sure to keep cheesecake inside oven for an additional hour after baking with oven door half open to prevent cracking
My cheesecake never cracks, even under the freshly sliced strawberries!
