Mini Fruit Pies
Filling of freshly harvested blueberries, blackberries, and diced peaches mixed with sugar, tapioca starch, lemon zest and a pinch of salt. Used lid from large yogurt container to cut out dough to fit in muffin tin. Used a biscuit cutter for top crust. Brushed top with cream and a sprinkle of sugar. Oven preheated to 450 then dropped to 350 when pies were placed in oven. Baked for 30 minutes. Enjoy!
