Peach Pie for Father's Day! Still working on my lattice crust styling and finding the sweet spot in my oven. I always put a metal pie saver ring after 30 minutes plus or minus, so the edges don't burn too much. Yellow peaches from the Farmers Market, peeled and sliced then add a bit of brown sugar and lemon juice and into the crust from TJ's (my favorite when I have not made one). Brushed the top with melted apricot jam and into a 450 degree Fahrenheit oven for 30 minutes, cover the crust maybe a bit sooner than I did, turn down the oven to 325 degrees Fahrenheit and bake another 25 minutes or so. I now wear my timer around my neck...this has saved me so many times when I forget how long something should be cooking/baking. Cooling now and will serve with vanilla ice cream. #peaches
