Grilled pork chop and veggie skewers.
Baked brown rice and black beans: 1 1/4 cups brown rice, 1 can black beans drained, 1 tsp salt, 1/4 tsp each cumin, chili powder, onion powder, garlic powder, cayenne. Add 2 1/2 cups boiling water. Cover with foil and cook 1 hour at 375.
For sauce, use immersion blender to combine 1 avocado, 1/2 cup plain Greek yogurt, juice of 1 lime, handful cilantro, salt, drizzle of honey.
Top with chopped green onions and hot pickled banana peppers.
