Generously salt and pepper rub 4 lb pork butt, tie up and let dry in fridge 12-48 hours, low fire smoke 1 hour, braise in one can of beer, half onion, oregano, 3-5 hours at 300. Add a large pinch of a good paprika and chili flakes to equal parts honey and vinegar. Pull pork and serve with drippings and vinegar sauce.
