Gazpacho tweaked from the recipe at www.thekitchn.com. I finally found my go-to homemade gazpacho recipe!!! The secret in their recipe is fish sauce! Only change I had to make was using the whites of scallions instead of red onion because that's what I had on hand. I also halved the recipe and weighed the tomatoes to make sure I had 1 pound since I think that may be the problem with some gazpacho recipes I've tried-too much of a variance in the actual weight of "5 (or 6 or 7) tomatoes".Tomatoes, cucumber, garlic, onion, rice wine vinegar, fish sauce topped with some homemade yogurt, scallion greens, avocado and a little Hawaiian volcanic sea salt.
