Boil rice in a 3:1 radio of water to tequila with the juice of one lime.

Slice poblano peppers in half, remove seeds and ribs.

Brown Trader Joe's soy chorizo, and mix with diced tomatoes and black beans.

Layer rice on bottom of poblanos, then heap chorizo mixture. Sprinkle goat cheese on top.

Bake or grill until poblanos are soft and starting to brown.
