When you need to change up your salad game, crank your oven up to 450 and roast some broccoli with leeks, lemon zest, and olive oil (and of course, season to taste!) for 12-15 minutes. In your serving bowl, combine a green (here, spinach) and an herb (here, parsley), pour in the lemon juice from the previously zested lemon, and some chopped almonds. Dump all the roasted goodness into the bowl, tossing until the spinach wilts slightly and the lemon juice coats everything. Toss with feta, if desired.
