The Ultimate Leftover Pasta: grab a handful of spinach, four cloves of garlic, kalamata olives and healthy drizzle of olive oil into a blender/food processor. Transfer sauce to a sauté pan, add a splash of white wine and cook with mushrooms on low heat for 8-10 minutes. Cook any kind of pasta while you're working on the sauce.
