Shrimp & Udon Stir Fry
Saute garlic & a big chunk of minced ginger. Add mushrooms & Bok choy, then the shrimp. Season with salt and pepper and set aside.
Sauce: 2 tablespoons hoisin & soy sauce, a dash of chili if you like, and some veggie stock. Pour into pan and let simmer for a few minutes until it gets thicker, add udon and mix in veggies. Enjoy!
