Almond rhubarb bars!
Three layers: favorite easy pie crust for the bottom. Almond paste in the middle: in a food processor mix toasted almonds, sugar, a bit of flour, salt, butter, and almond extract. Top layer: chopped rhubarb! Pre-bake pie crust for 10 minutes, allow to cool, spread almond paste on top and arrange rhubarb. Bake bars at 350 for about 35 minutes. Sprinkle sugar on top before or after baking. Also can spread a warm jam glaze on top. Inspired by Smitten Kitchen <3
