Sometimes you need the appeal of a hand roll, and you need it quick. A go-to five minute lunch in my repertoire:

Mash a small avocado with wasabi, soy sauce, and rice vinegar. Add a healthy dose of sliced cucumbers. (Today I also added fresh dill.) Pile cool as a cuke mash into quartered nori sheets, roll, and eat.
