Pan fry thinly sliced tofu in garlic and ginger infused peanut oil. Remove & dry.
Mix together peanut butter, soy sauce/tamari, fish sauce, sesame seeds, and mirin. Add to the oily pan and reduce slightly.
Add the tofu back in, mix together with the sauce, then remove from heat. Add sliced green onions and serve over fresh vermicelli with pickled carrots.
