Pork tenderloin, cubed, on skewers on the grill.
While the grill was getting hot, I stirred together 2 big dollops of horseradish mustard, a couple good splashes of soy sauce, about a tablespoon of finely chopped, just picked rosemary leaves, the zest and juice of a lemon, some freshly ground black pepper,and a good glug of oil.
I cubed the pork tenderloin and tossed it in the marinade, letting it sit while I made a fresh corn, tomato and black bean salad, sliced zucchini for grilling, and made a simple green salad. I alternated chunks of pork with pieces of scallions, yakitori style.
These require 8-10 minutes on the grill, total, turning ever few minutes.
Cleanup for dinner takes less than 10 minutes.

Cheat codes: You can make the marinade ahead of time, and cube the pork and let it sit in the marinade for up to 48 hours, though it's really not necessary.
