Blueberry Mint Lemonade - Hard or Virgin!
Delicious, tart, not too sweet, not too minty drink. SO REFRESHING. Great to serve at a summer BBQ - also great with a slug of vodka in it. Makes about 10 - 15 servings. Enjoy!
3 cups sugar
3 cups water
3 cups packed mint leaves
3 cups fresh lemon juice
5 1/2 cups cold water
4 cups blueberries
Mint leaves for garnish
1. Make a mint simple syrup: combine water, sugar, and mint in a saucepan and simmer until sugar dissolves. Remove from heat and strain into a pitcher.
2. Combine the lemon juice, water, and blueberries in a blender (I do this in 2 batches). Blend. Strain through fine mesh to catch blueberry skins. Pour into pitcher with mint simple syrup. Stir to combine.
3. Serve over ice, garnished with mint leaves, and for the grown ups, with some vodka.
