Boil 3 pints of water. Add 1.8kg of sugar and 85g of citric acid. Stir until dissolved.
Once dissolved, add the rind of three lemons to the syrup. Slice the lemons into discs and add. Finally, add approx 40 heads of fresh elderflower heads. Leave to sit for three days, stirring occasionally. Once ready, sieve and store in sterilised bottles. Enjoy!
