When you come across great figs (or, better, not so great) roast them like David Lebovitz (that's what Sarah Jampel did). Mix with sprigs of thyme, 1 tablespoon Cointreau, 1 tablespoon honey, 1 tablespoon brown sugar, and a pinch of salt. Cover with foil and bake at 350 for 15 to 20 minutes until juicy and squishy and ready for your yogurt and ice cream and oatmeal.
