crusted branzino with garlic scapes and a bottarga and roasted garlic pasta.

Wow, that fish is gorgeous! How did you do it?

Thanks! I mixed cornmeal with spices--mainly smoked paprika--salt and pepper. Then I scored each side of the branzino about 3/4 of an inch spacing diamond pattern. I rolled the fish in the corn meal while spreading it out so it got into the grooves. Backed it in a hot oven using a skewer to stand it up in a crescent shape.
