Red quinoa with lamb chops
Sauté shallot with rinsed quinoa for a few minutes then add chicken broth , cumin, salt & pepper. When quinoa is cooked transfer to a bowl and add zucchini, red bell pepper, tomatoes that where sautéed in olive oil with shallot, fresh garlic and cumin. Toss, add more olive oil if needed, squeeze some fresh lime or lemon and add some fresh cilantro.
Lamb chops are seasoned w garlic salt, fresh black pepper & Hungarian paprika seared in a very hot cast iron pan, Bon appétit
