Jambalaya made from fridge leftovers!
Great for using up leftover chicken, peppers from salads and in this case carrots!
Make a base using onions or shallots, garlic and chicken. Chop the other veg (carrots, peppers, even things like green beans - but put these in at the end).
Add to a large pot with rice, tinned tomatoes (or lots of fresh ones), chilli, cayenne pepper, paprika, oregano and season. Top up with stock and cook on medium until the rice is done. You can also add chorizo, prawns or do a ham version. Whatever you need to use up!
