I spatchcocked two 2-3 pound birds and marinated them (see previous post) for about 6 hours in the fridge. Then I grilled them over medium-low heat (using a gas grill, with the cover down) for about 20 minutes, starting with the meat/skin side facing up and flipping about 5 minutes before they were done. The chickens were juicy and really flavorful!
