Preheat oven to 175 Celsius.
The catfish basically cooks itself! Line the bottom of the pan with a drizzle of olive oil, and dot the bay leaves around the pan. Place the fillets on top of the bay leaves, then cost in a healthy pinch of fish spices. If no fish spices, then improvise with lemon zest, coriander, and basil in a food processor and applied as a paste. Gently drizzle more oil on top of the fish to keep it moist while cooking. Add the capers on top and around and include a bit of their brine. Put in the oven and cook for 20-25 minutes until the fish flakes apart with a butter knife.
