Grilled Corn Salad. Grill 4-6 ears of shucked, oiled and pepper'd corn. Let cool. Slice kernels off the cobb. Toss with diced red onion, diced bell peppers and a big handful of chopped basil. Add some chopped chives and scallions...if you have them on hand. Toss with a simple vinaigrette of Apple cider, olive oil, salt and pepper.
