Charred Brussels sprouts with Parmesan and scallions
Chop Brussels sprouts into 3-4 pieces
Cook in single layer with bacon grease, butter, smoked salt, and pepper, flipping to char both sides… deglaze pan and slightly steam sprouts with liquid (I used chicken bone broth)
Remove from heat, add Parmesan cheese and chili flakes
Let cool slightly, stir in scallions
